It's Pumpkin Spice Season!

Do you smell that? It’s the smell of pumpkin spice coffee & pumpkin pastries brewing throughout the air. That time of the year where the air has a cool breeze, the leaves are slowly changing & pumpkins are slowly coming out of everywhere! What could possibly beat that?!

As we fill our cafeterias & party events up with pumpkin coffee & pumpkin pastries we wanted to share with you our favorite pumpkin pastries to bake during this season!

1. Pumpkin Coffee Cake:


½ cup butter 1/3 cup butter

3 eggs1 cup sugar

¾ cup sugar2 teaspoons ground cinnamon

1 teaspoon vanilla1 cup pecans (or walnuts)

1 cup sour cream

2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1 can pumpkin

¾ cup sugar

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground cloves

2 eggs

½ cup evaporated milk

Topping:

1/3 cup butter

1 cup sugar

2 teaspoons ground cinnamon

1 cup pecans (or walnuts)

2. Pumpkin Spice with Cream Tarts:


Topping:

1/4 cup all purpose flower

1/4 cup firmly baked brown sugar

1/4 cup finely chopped pecans

2 tablespoons land O lakes butter, softened

Crust:

3/4 cup land O lakes butter, softened

2 (3-ounce) packages cream cheese, softened

1 1/2 cups all purpose flower

Filling:

1 (14-ounce) can sweetened condensed milk

1 1/4 cups mashed cooked pumpkin

1 large land O lakes egg

1 teaspoon pumpkin pie spice

Garnish:

Heavy Whipping Cream, Whipped.

3. Pumpkin Whoopee Pies:


1 ½ sticks unsalted butter,

1 stick melted, ½ stick softened

1 cup packed light brown sugar

2 large eggs, at room temp. Lightly beaten

1 cup canned pure pumpkin puree

1 tablespoon pumpkin pie spice

1 ½ teaspoons pure vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

¾ teaspoon plus 2 pinches salt

1 2/3 cups flour

4 ounces cream cheese, chilled

1 cup confectioners’ sugar

4. Iced Pumpkin Cookies:


2 ½ cups all purpose flour 1 ½ cups white sugar

1 teaspoon baking powder

1 cup canned pumpkin puree

1 teaspoon baking soda

1 egg

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

½ teaspoon ground nutmeg

2 cups confectioners’ sugar

½ teaspoon ground cloves

3 tablespoons milk

½ teaspoon salt

1 ablespoon melted butter

½ cup butter, softened

1 teaspoon vanilla extract
